With a desire to sit on a deck on a warm spring cheese platter at the ready, we needed to make the perfect wine to suit.
With much research, we decided a sparkling Shiraz was in order.
Timing was everything, and our decision to have at a crack a sparkling Shiraz coincided with the harvest of Block 5, with the rows not selected for our premium wines allocated to this little project.
As an infant, it was treated in the same way as our award winning Finniss River Shiraz, spending 8-10 days on skins for colour and tannin extraction, and then pressed onto French oak for maturing.
After more than 18 months the time was right, and after a little tweak here and there, we bottled our first sparkling Shiraz, which has turned out to be perfect with a cheese platter on a warm spring day.

Dark Red with Violet Hues.
Bouquet
Aromas of mulberry and blackberry fruits, with a hint of spice and white pepper.
Palate
This fruit driven wine is balanced with light tannins. The berry and spice aromas are beautifully complemented with wonderful flavours of spicy plum, cherry and dark berries that linger on the palate.
