2018 was our third Chardonnay vintage, again Block 12 was selected for location, a nice gentle east facing slope, benefiting from afternoon shading, allowing the fruit to develop at a nice gentle pace.
The mild summer days and cool nights saw a perfect balance of acid and sugar develop in the berries, and allowed us to pick in the wee hours of a March morning.
We continued the style of our 2017, and put the wine through malolactic fermentation, and left the wine siting on lees for about 9 months, to add further complexity and mouth feel.
In late 2019 we bottled this little beauty of a Chardonnay, and are loving the result.
Clear light straw in colour, displaying aromas of ripe grapefruit, honey dew melon, lychee and a slight note of fresh cookie dough. Fresh, crisp and refreshing. These aromas follow though on the palate with added green apples and nashi pears. The crisp light acidity is balanced out by a ever so subtle buttery mouth feel, brought on by the slightly extended lees contact.
