Lauren loves bubbles, so it was inevitable that we’d have to create our own to satisfy her hunger. After much research and development, we had our style rubber stamped – non-vintage Brut Cuvee, refreshingly dry with balanced acid, and the all-important fruit characteristics.
Once we made the decision in January 2016 to get this little project underway, we needed to pay attention to the Chardonnay in Block 20, paying particular attention to the acid/sugar balance in the bunches as they ripened.
In late February 2016, we picked about 10ton of Chardonnay, and made our first sparkling base. The finished wine was monitored in tank and allowed to develop over the next year.
We repeated the process in 2017 and made our second sparkling base, which was even better then the first. Once the 2017 base was ready, we blended some of it with the 2016 to achieve the balance of fresh and developed flavours we desired. The balance of the 2017 base has been left in tank to develop, so that we can repeat the process next year.
The final bottling blend was then left for a couple of months, and we bottled in late October 2017.
We believe we have created the perfect celebratory wine, but you don’t need a special occasion to drink it, just ask Lauren.

Aromas of ripe grapefruit and guava, with a note of bush honey.

Crisp, dry and refreshing with early season white peaches and a subtle buttery mouth feel.
